Actually, we had our development partner, HIP Gastroplex, do the heavy lifting, while having loads of fun designing the product, the brand, the marketing, even the business.

From Marshmallows to CaffeMallows™
How old do you think the marshmallow is? Would you believe before Columbus, or the Vikings discovered America? How about before the birth of Christ? Maybe 4000 years? That's right: 4000 years old!
Marshmallows date back to ancient Egypt. Some historians claim these culinary delights got their name when Egyptians discovered they could produce a sweet sticky substance by squeezing the mallow plant (Athaea officinalis), which grows wild in marshes. They flavored the extract with honey. The delicacy was so special, it was reserved for gods and royalty only.
Fast-forward to France in the mid-1800s, when marshmallows miraculously reappeared. Owners of small candy stores made them by sweetening, whipping, and molding the sap from the mallow root. Doctors extracted juice from the plant's roots. It was then cooked with sugar and whipped with egg whites. When this foamy meringue hardened, it created a medicinal candy that was used to soothe children's sore throats, suppress coughs, and even help to heal minor cuts, scrapes, and burns.
Folks liked the marshmallow's unique texture and taste so much that candy makers couldn't keep up with the high demand. Today Americans, who have taken to the confection more than any other nation, purchase more than 90 million pounds annually.

Over 30 years of Food Science education and practice didn't hurt either.

We are also GMO-free!
Our marshmallows are now completely non-GMO. GMO stands for Genetically Modified Organisms. Most people have no idea that a large portion of the food they eat each day has been genetically modified. Today 93 percent of soybeans and 80 percent of corn in the U.S. is grown from seeds that have been genetically altered, according to Monsanto company patents.
No GMO Corn
The health risks of GMOs are unknown and there is no way to really test for their long term impacts on humans. Now researchers have discovered that U.S. streams are also contaminated with insecticides genetically engineered into crops.
Most marshmallows and mass-produced candy in the US contain corn syrup (from GMO corn) as a main ingredient. It's not easy to make marshmallows without it. But the wizards at our research partner, HIP Gastroplex, have created new recipes that do not contain any GMO ingredients.
Better product
For a long time now, many areas in Europe have been GMO-free. Caffex wants to expand its territory and has therefore applied food science and ingenuity to produce completely GMO-free products. A beneficial byproduct of these new recipes is that the marshmallows are even fluffier and melt in the mouth even faster.
